Strawberry Avocado Summer Salad (GF)

This summer salad brings together sweet strawberry, peppery arugula, and creamy avocado for a bright, satisfying side or main dish.


Notes

- If arugula is not readily available, you can substitute with a milder lettuce, such as butter, sweet leaf, or even spinach.

- This salad would also taste delicious with the addition of sweet summer corn, even cut fresh and added raw.

- Salad should be made right before serving.

Ingredients

For Salad

5-7 Medium to Large Strawberries

1 Avocado

1 Package of Washed, Ready-to-Use, Baby Arugula (5 oz)


For Dressing

2 tbsp Apple Cider Vinegar

2 tbsp Honey

2 tbsp Extra Virgin Olive Oil

.25 tsp Kosher Salt

Fresh Cracked Pepper

Instructions

For Salad

  1. Dice avocado and chop strawberries into bite-size pieces.

  2. Reserve a small portion of avocado and strawberries to decorate the salad on the serving platter.

  3. In a bowl, combine arugula, avocado, and strawberries. Sprinkle lightly with kosher salt and dress to taste.

  4. Transfer dressed salad to a serving dish and arrange remaining strawberries and avocado over the top.


For Dressing

  1. Whisk together honey, vinegar, and salt until smooth.

  2. Add olive oil and 1-2 turns of pepper from a pepper mill.

  3. Taste to adjust seasoning as needed.
